St. Patrick's Day Rice Krispie Treats

Happy St Patrick's day! Are you of Irish descent, do you celebrate? We are not, but it's fun to make a few green treats and put out a few green decorations here and there!

Life Update: I finally got a job and I start on Wednesday! Woohoo! I will be the receptionist for a busy medical office. It's been several years since I worked in the medical field, but I'm sure it will all come right back to me when I get in to it.  I'm excited and nervous all at once, but it'll all be ok and I'll do fine! :)
Let's get on to our sweet treat here.  Of course we all know about Rice Krispie Treats, but these are special and tinted green for St. Patrick's Day and best of all, they have Lucky Charms marshmallows in them for extra luck!

St. Patricks Day Rice Krispie Treats

Ingredients:

  • 4 cups of soft marshmallows
  • 1/4 Butter
  • 5 cups of Rice Krispie cereal
  • 1/2 teaspoon of vanilla extract
  • Green food coloring, 3-4 drops (optional, but it's St. Patrick's Day, so.........)
  • 3/4 - 1 cup of Lucky Charm’s marshmallows – I hand picked them out of the Lucky Charms cereal box and filled my 3/4 cup to mounded, just to make sure there were plenty! Heehee!
Instructions: Melt the butter over low heat until it's completely melted. Gradually add marshmallows and stir often to avoid burning them. When marshmallow/butter mixture is completely melted, add 1/2 teaspoon of vanilla and the green food coloring and mix well. Remove from heat and stir in your Rice Krispie cereal. Once mixture is mostly combined, stir in the Lucky Charm’s marshmallows.  Use a 9 x 12 pan and spray lightly with oil or butter.  Pour the warm mixture into the greased pan and with a wooden spoon, press down to gently pack the treat into place.  Let cool completely and then cut into squares.  Store in an air tight container and they will stay softer longer! A Ziplock bag or Tupperware works great!
The only thing not shown here is the butter.  It was already melting int he pan when I thought it would be a "cool blogger thing" to snap a picture of all the ingredients.

While the treats were still warm, I added a few more Lucky Charms marshmallows on top for decoration.  Your kiddos or grands will get a big kick out these, so go make some, they are so easy!
