Healthier Banana Bread

I pinned a healthier banana bread recipe way back when and I finally got around to trying it.  So yummy!  We don't even miss all the sugar that goes in the old fashion banana bread recipes.
This bread is very moist and to tell you the truth, it hard to eat just one piece! LOL!
Here's the secret ingredients to healthier!  Apple sauce and honey.  Who knew? Oh, you did!  Well, it was new to me and we love it! :)

Banana Bread
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar free applesauce
  • 3/4 cup honey
  • 2 eggs, beaten
  • 3 mashed overripe bananas
  • 1/2 cup chopped pecans
  •  
Preheat oven to 350 degrees. Grease and flour a 9x5 inch loaf pan. 

In one bowl, combine flour, baking soda and salt. In another bowl, mix together applesauce and honey. Add in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture.  Stir just until blended, don't over mix.

NOTE: A tip my Mama taught me, when your bananas get too ripe to eat, pop them into the freezer.  When you are ready to bake with them, sit out the number you need to thaw, then use.

Pour batter into prepared loaf pan. 

Bake 60 minutes. 
Insert a toothpick into the center of the loaf and if it comes out clean, its ready! Let bread cool long enough to where you can handle the pan and then turn out onto a wire rack for cooling.
Just look at all that yummy goodness and you don't have to feel guilty about having a piece, just don't eat the whole loaf in one sitting! Heehee!
After the bread cooled completely, I sliced it into to pieces and stored it in an air tight Rubbermaid bowl.  If you're house is anything like mine, it wont last very long, but you can store it in the fridge if needed.
