I've always used my Mamaw's recipe and to the best of my knowledge it's the standard recipe for pumpkin pie but none the less its the one I always reach for.
Mamaw always made her own crust and her recipe for that is in her little recipe box I have, but I could never make it work out so I just use the store bought crust and they always turn out yummy too.
To me the hardest part about making pumpkin pie is carrying the mixture filled crusts to the oven without spilling them. The mixture is a very watery consistency and I really have to concentrate on not spilling! Other than that, it's so very simple.
This is Mamaw's actual recipe card from her little recipe box. You can see its been well used. She made notes for making a double batch and also at the top you can see she noted "or Sweet Potato Pie"...I have not tried that yet, but I should! Below is my Mamaw's recipe.
Mamaw's Pumpkin Pie
2 - Eggs slightly beaten
1 1/4 cups - Libby's Pumpkin
3/4 cup - Sugar
1/2 tsp - Salt
1 tsp - Cinnamon
1/2 tsp - Ginger
1/4 tsp - Cloves
1 2/3 cup - Evaporated Milk
2 - 9" unbaked Deep Dish Pastry Shells
Mix ingredients in order given and pour into pastry shell. Bake in hot oven at 425 for 15 minutes. Reduce temperature to 350 cook till knife inserted into center comes out clean (about 30-35 minutes).
I always make pumpkin pie for the holidays so I guess you'd call it a family tradition. It's one tradition that we all love to eat. I hope you try it and love it as much as we do.
It doesn't have to be done all at once. It is a slow process in the works! C-ya next time!
