Sausage and Egg Breakfast Muffins

If you like quick and easy, this recipe is for you!  I made these sausage and egg breakfast muffins for the guys breakfasts for one week.  They don't make a lot of time in the morning to make breakfast, so we try and have something fast and easy for them to grab on the way out the door.  These make for a good on-the-go meal!
 Don't they look good?  That's because they are!  The day I made them I had lots of test tasters and they all approved.
You will need the following items to make this recipe.  This makes 12 muffins.

Sausage and Egg Breakfast Muffins

12 large eggs
1/2 tsp salt
1/2 tsp pepper
cayenne pepper to taste (optional)
1/4 tsp garlic powder
1/4 cup onion, diced
1/4 cup bell pepper, diced
Splash of milk (2-3 tblsp) (I use almond milk)
1 pkg breakfast sausage, browned
1 cup shredded cheese
Olive Oil Spray or cupcake liners
In a large pan, add sausage, onion and bell pepper together until browned.
Break all 12 eggs into a mixing bowl with a spout if you have it.
Add salt, pepper, cayenne pepper and garlic powder and beat eggs with a whisk.
Add a splash of milk and mix well.
Generously spray your pan with oil.  The better its oiled, the easier they will come out of the pan.  If you don't want to use oil, try using cup cake liners.
Now add the sausage, onion and pepper mixture to the bottom of each cup.
Now fill each cup with your eggs.  Leave about 1/4 of an inch from the top, they will rise up.
Top each cup with a sprinkling of shredded cheese.
Add the cup cake tray to the preheated oven set at 375 for 20 minutes.
They should have risen up and look slightly browned around the edges when they are ready.  Let them cool so you can handle them.
I placed two in a baggie and made sure they completely cooled before I sealed them up and placed them in the fridge.  You can freeze these too if you want to make lots of them ahead of time.
Now all the guys have to do is pop them in the microwave for a few seconds and breakfast is ready!  So, are you going to try these muffins too? I sure hope so, they are delicious!
