Cherry Cream Cheese Pie

I bet you can't guess what we've been up to? Eating Pie? Heehee!  No, we are still working in the kitchen. Making over existing cabinets is a bit more work than we expected!  My honey is taking the cabinets and cutting them down to size, so its taking some time to get it all just right.
This pie recipe is one of my all time favorites.  My Mamaw and Mama always made this yummy pie.  It's very easy and best of all, you don't even have to heat up your kitchen with the oven to enjoy this pie!
Of course I always pull out Mamaw's recipe card and like the others I've featured HERE and HERE it been well used.  Have I told you how much I love that Mamaw made little notes in her handwriting on all her recipe cards?  That makes me smile!  Here's Mamaw's recipe:

Cherry Cream Cheese Pie

1 - 9" Graham Cracker Crust
1 - 8 oz Cream Cheese (softened)
1 - 15 oz Eagle Brand Milk
1/3 cup lemon juice
1 tsp. vanilla
1 large can of Cherry Pie Filling (chilled)

Set out cream cheese to soften.  When cheese is soft, whip with hand mixer until fluffy.  Gradually add milk, juice and vanilla while beating until well blended.  Pour into crust and chill for 2-3 hours before garnishing top of pie with the cherry pie filling.
This is the yumminess that you will end up with.  To make your pie a lighter version of the above recipe, you can use light cream cheese and sugar free pie filling.  You can also make your own graham cracker crust and use a pretty pie dish to doll it up a bit too!
Look how luscious looking that is!  For this pie to be so easy to assemble, it tastes like you worked for hours in the kitchen to make it.  Ssshh!  I wont tell if you wont!  Go ahead, take it to your next party and everyone will want your recipe!
This pie never lasts too long around our house which is probably a good thing because its dangerously good!

It doesn't have to be done all at once.  It is a slow process in the works! C-ya next time!
