Patriotic Strawberry Shortcake Parfait

Hello there!  I hope you're doing your best in these weird times of our world.  In light of what's been happening lately, I just want to say that I am not knowledgeable enough to speak intelligently on the subject, but I am listening, learning and praying that everything will turn out the right way.  I pray that some day our world will all be at peace with each other and that people of color will not have to worry about the things they have to worry about today!

HOUSE UPDATE: Our lives are moving right along and since we were told a week ago that our lease would not be able to be extended, like we were told we could do in the beginning, we have had to go full force in finding a house.  Well, like I told you last week, we were pretty sure we had found "the one".  We did eventually decide on that house and then we placed an offer in on it and guess what?  We won!  Now we are waiting for all the "not so fun" details to get done so we can move along to the fun part, moving in!  Actually moving is NOT fun, but having our very own home again can not get here soon enough! :)
It's definitely Summer here in Texas already, we've been touching 100 degrees for the past few days! Whew!  How about a nice refreshing dessert? Strawberry Shortcake Parfait.  It's very simple to put together but your family and friends with be so impressed with your beautiful presentation!
Doesn't this look so delicious?  Oh it was too, my honey and I enjoyed every bite of it! :)
First thing I did was to cut up my strawberries into bite sized pieces, add them to a plastic container with a lid, sprinkle about one table spoon of sugar over them, stir to incorporate and then refrigerate over night.  I added a few blueberries to the mix just for a bit of patriotic color!
You will need the usual for strawberry shortcake, fruit, cool whip and shortcakes.   I used some of my vintage parfait glasses to build my desserts.
These are small glasses, so I used one cake for two desserts.

STEP 1: I tore the cake in half and then tore off a few pieces and added it to the bottom of the glass like you see here.
STEP 2: Add a dollop of cool whip and smooth it around with the back of your spoon.
STEP 3: Use on heaping spoon of fruit and press it down gently to level it out.
STEP 4: Repeat all the steps above.
How pretty and festive does that look?  I don't know about you, but I love Strawberry Shortcake and it seems even better in parfait form!
The combination of the strawberries and blueberries were perfectly sweet. Yum!
Why not serve this at your fourth of July celebrations coming up?  I'm pretty sure we will, because its delicious!
