Summer Broccoli Salad

Of course you can make this salad any time of year, but it just looks like Summer to me, so I named it Summer Broccoli Salad.  It's a take on the broccoli salad I normally make, but more colorful!
This is our Memorial Day feast of grilled hot dogs, broccoli salad, chips and dip and of course, dessert of berries and cake. Yummy!  We thoroughly enjoyed it!
Summer Broccoli Salad

1 lb of fresh broccoli cut into bite sized pieces
3 slices of bacon cooked crisp
1/2 small red onion, finely chopped
1/4 cup dried cranberries
1 small can mandarin oranges
1/2 cup fresh blueberries
1/4 cup sliced almonds
1 cup of light mayonnaise
1/4 cup sugar
2 tsp white vinegar

Toss broccoli with bacon, onion, cranberries, blueberries and almonds.  Save oranges until very last and stir in after you've stirred in the dressing.  In a separate bowl, stir together mayo, sugar and vinegar.  Add dressing in with broccoli mixture if you are serving in an hour or two, but if not leave separate until about an hour before you are ready to serve.  Refrigerate.  Toss one more time before serving and enjoy!
NOTE: The vinegar will cause the broccoli to wilt after sitting longer than a couple of hours.
Even if you're just having hot dogs for a meal doesn't mean you can't set a cute table too!  I used some of my Pioneer Woman Collection along with a few vintage goodies and created this sweet little tablescape for my honey and I.
Over the course of the holiday weekend, we consumed this entire bowl of salad.  It was so good that it is definitely a keeper!

It doesn't have to be done all at once.  It is a slow process in the works! C-ya next time!
