Light Creamy Broccoli Salad

We love a good salad and this one is really good! I found the recipe on Pinterest and then tweaked it a bit to fit our family. You can see the original recipe here.
Doesn't this look scrumptious?  That's because it is!  This salad goes perfect with just about everything and you can also eat it alone for a quick lunch too.
I used turkey bacon bits because my tummy doesnt tolerate pork very well, but use what you like best.
Just a tip:  You will want to chop your red onion really small and make sure you get very fresh and nice looking broccoli for your salad.
This is the creamy dressing.  It is good just alone by itself, but when you add it to the rest of the ingredients, you've got yourself some a really yummy salad.
This is all the dry ingredients tossed together before I added the dressing.  Such lovely colors already, don't you think?

Light Creamy Broccoli Salad

  • 1 lb fresh broccoli, cut into bite sized pieces
  • 1/4 cup turkey bacon bits
  • 1 small red onion, chopped really small
  • ½ cup dried cranberries
  • ¾ cup sunflower seed kernels
  • 1 cup light mayonnaise
  • ¼ cup sugar
  • 2 tsp. white vinegar 
Toss broccoli with bacon, onion, cranberries and sunflower kernels.  In a separate bowl, stir together light mayonnaise, sugar and vinegar.  Add dressing in with broccoli mixture if you are serving in an hour or two, but if not leave separate until about an hour before you are ready to serve.  Refrigerate.   Toss one more time before serving and enjoy!
NOTE: The vinegar will cause the broccoli to wilt after sitting longer than a couple of hours.
