Fish Tacos with Mango Cucumber Salad and Creamy Taco Sauce

Healthy and good, that is what this meal is!  My honey loves fish tacos and I think they are pretty good myself!  I recently made this yummy recipe and I wanted to share with you.
These tacos are made up of oven "fried" fish, creamy taco sauce and fresh Mango Cucumber Salad. All of these items are a pretty healthy alternative compared to what you eat in restaurants.

The oven "fried" fish fillets on these tacos are a new recipe I recently tried and they are so good! Have I said "so good" too much so far? LOL!

Oven "Fried" Talapia

⅔ cup yellow cornbread mix
¼ cup all purpose flour
2 teaspoons salt
1 teaspoon black pepper
½ teaspoon cayenne pepper
½ teaspoon lemon pepper
¼ teaspoon paprika


2 large eggs
2 teaspoons hot sauce
6 Talapia fillets
Olive Oil Spray

Preheat the oven to 425 degrees.  Line a cookie sheet with foil and spray the foil with olive oil.  Mix together the first 7 items in a large ziplock baggie.  In a shallow bowl, lightly beat the 2 eggs and hot sauce together.  Add each fillet to the egg mixture, then add to the ziplock mixture and coat evenly on both sides. Place the fillet on the cookie sheet.  Continue with all the fillets.  Lastly spray the tops of the fish fillets with olive oil until completely covered. Bake for 20 minutes and remove to cool.
Next up is this salad of freshness and goodness.  This stuff is good enough to eat as a side dish as well.

Mango Cucumber Salad

1 can black beans, rinsed and drained 
1 cup fresh or frozen Mango chunks
1 large tomato, diced small
1/2 cup onion, diced small
1 cup Cucumber, diced small
2 limes, juiced
salt & pepper, to taste

Stir together in a sealable bowl and refrigerate to mingle the flavors.
Lastly and most easy, the creamy taco sauce.

Creamy Taco Sauce

1/3 cup Greek Plain Yogurt
1/3 cup Light Mayonnaise
1 tablespoon Taco Seasoning (My homemade recipe HERE)
juice of 1 lime


Mix all ingredients together well and chill before serving.
Assembly is the best part because its almost time to bite them!

First lay down your tortilla, add some creamy taco sauce, your fish, the mango cucumber salad and then top with avocado chunks.

One thing that makes these tacos even better is the half flour, half corn tortillas from HEB grocery store.  Yummy!

It doesn't have to be done all at once.  It is a slow process in the works! C-ya next time!
