3 Summer Salads with Garden Fresh Tomatoes

Do you have lots of tomatoes from your garden that you need recipe ideas for?  We do too!  We are enjoying our raised bed gardens this year and we just happen to have a bumper crop of tomatoes that I've been using in some yummy summer salads I'd like to share with you. 
We've been trying to pick them when they just start turning so the birds and bugs don't get to them before we do.  I stage them in the kitchen window to ripen to their beautiful red color.
These lovelies were picked all in one day's harvest.  It's an every day job to keep up with who's starting to turn in the tomato section of the garden.
I found these cute little baskets at the dollar store.  They have the texture of the paper ones you see in grocery stores, but they are plastic and washable! So cute!  They make for a nice container in the fridge.
Ready for some recipes?  As usual here on Clover House, all three of these salads are easy and good all at the same time.  First up is this yummy tomato basil salad.

Tomato Basil Salad
  • tomatoes cut into bite sized chunks
  • extra virgin olive oil (about 2 tblsp)
  • balsamic vinegar (about 1 tblsp)
  • fresh basil chopped small
  • garlic chopped fine
  • red onion diced
  • salt and black pepper
Add oil, vinegar, basil, garlic, onion, s & p to a bowl and stir together.  Add tomatoes and toss to coat.  I don't have exact measurements on this salad because I usually just add enough ingredients to the amount of tomatoes I have.  This salad gets a better flavor the longer it sits in the fridge marinating.
Next up is my favorite of all salads, Cucumber tomato salad.  Yum!

Cucumber Tomato Salad
  • 3 tablespoons white vinegar
  • 2 tablespoons olive oil
  • 3 cucumbers, peeled and cut into bite sized chunks
  • 1 cup tomatoes, cut into bite sized chunks
  • 1/2 medium red onion, diced small
  • 1 teaspoon oregano
  •  salt and pepper to taste
Add vinegar, oil and sugar to a bowl and wisk together.  Add the remaining ingredents and toss to coat.  Let sit for about 30 minutes before serving to let the flavors mingle.
And the last salad is my Guacamole Salad that I've already shared on the blog right HERE.  It so yummy for summer!  Hopefully you can try all three of these salads and enjoy them as much as we do!

It doesn't have to be done all at once.  It is a slow process in the works! C-ya next time!
