Holy Guacamole Salad

Holy Guacamole this stuff is good! Sorry, I just had to say it! Heehee!  I was planning on making the regular guacamole for dipping, but my avocados were not quite soft enough for that.  That's when this salad happened.
This stuff is seriously good and I do believe I could eat it every day.  It's quick and easy to put together so you can make this on those nights when you are running short on time.
Guacamole Salad

Ingredients:
  • 2 ripe avocados, cut into big chunks
  • 1/2 red onion, diced
  • Cilantro to your liking, I used about a handful from our garden
  • Roma tomatoes, diced
  • Salt and pepper to taste
Dressing:
  • Juice of 1 lime - remember, roll it on the counter before you cut and juice
  • 1 teaspoon Garlic powder
  • 1 tablespoon minced garlic
Whisk together the lime juice, garlic powder and diced garlic in a bowl.   Now add all other ingredients and toss.  Refrigerate or serve right away.

What an awesome summer salad to add to your menu!  I hope you try it too.  I know we will be having this often! Yum!

It doesn't have to be done all at once.  It is a slow process in the works! C-ya next time!
