Balsamic Glazed Chicken with Bell Pepper

We're working on a new project right now...a really BIG project, so today I have a yummy recipe for you instead of a house project. Balsamic glazed chicken with bell peppers.
If you need a quick dish to prepare after a long day of work or maybe a special Sunday dish, this is an easy dish to make.  It's very yummy with rice pilaf, Zattaran's rice pilaf to be exact. Yum!
Look at these beauties! You could always use regular green bell peppers as well, but my sweet Mama came across a sale on these lovelies and she shared with us.
I got the original recipe from Pinterest...of course!  You can see her idea HERE.  She made sandwiches with her recipe.  Here's how I altered her recipe for my dish:

Balsamic-Glazed Chicken and Bell Peppers


4-5 chicken breast
4 teaspoons olive oil 
½ cup balsamic vinegar
3 bell peppers cut into strips (red, yellow, orange)
1 large vertically sliced onion
salt and pepper to taste

Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat.  Season chicken with salt and pepper. Add chicken to pan, cook until lightly browned.  Add ¼ cup vinegar, cook 2-3 minutes or until chicken is done and vinegar is syrupy. Remove chicken mixture from the pan, cover and keep warm.

Return pan to medium-high heat, add remaining 2 teaspoons oil. Add bell pepper and onion, saute 7 minutes or until tender. Stir in remaining ¼ cup vinegar, cook until vinegar is syrupy.  Return chicken to the pan for warming until you're ready to serve.  So easy!
