Dill Sauce

So our garden adventures (See all 3 previous posts HERE) are coming right along.  We did have one last hard freeze.  We covered the beds for protection from the freeze. Well, the plants didn't do so well even covered.  We goofed!  More details on that next week.  We learned a very good lesson and we'd like to share it!

On to today's post.  We eat a lot of baked fish.  We do however get tired of the same ole recipes I use for baking the fish.  While we were out to eat one weekend, I ordered grilled salmon and it came with dill sauce.  YUM!  I needed the recipe!
I of course got right on Pinterest looking for a recipe to try at home.  This one is the one I used to base my recipe on.  Really simple and easy to put together.
For the recipe I pinned, I didn't have all the ingredients so I just used what I had to create our sauce.  It turned out really yummy.  I'm pretty sure I could just eat it with a spoon! LOL!  Of course you could make it even less calories if you used light mayo instead of the real stuff I used, its what we had on hand.  Here's my recipe:

DILL SAUCE
1/3 cup plain Greek yogurt
1/3 cup mayonnaise
1 tablespoon chopped red onion
1 teaspoon lemon juice
1 teaspoon spicy brown mustard
3/4 teaspoon dill weed
1/4 teaspoon garlic salt
Black pepper to taste

Mix all the above ingredients until smooth.  I chilled mine for about 30 minutes after mixing together and the flavors had some time to mingle before serving.
It makes a good amount and we had plenty left over.  I'm going to look into what else it would be good on because you do not want to waste any of it for sure!  Do you have any ideas of what else to eat it with?

It doesn't have to be done all at once.  It is a slow process in the works! C-ya next time!

  3. Oh forgot to mention I wonder how it would be on a cucumber sandwich. I usually do cream cheese, but wondering if this would be an option.
