A Yummy Supper and a New Recipe!

 Happy Sunday!
I hope you all had a wonderful week!  I know we sure did!  The weather wasn't all together perfect, but there wasn't anything too bad either!

Today we are celebrating Mother's Day with my wonderful Mama!  We had a little change of plans last week, but decided to go ahead and get together today!  We'll be having lots of good eats and conversations along with lots of smiles I bet!

Remember the poll from last week? Well it was voted in favor of us sharing a new recipe with you each week, so the very first one will be posted today! How's that?
{Grilled Eggplant}
 Before we get to the recipe...do you like eggplant? How about grilled eggplant? We do too! All I did was slice the eggplant into about 1/2" slices, sprinkle them with salt and then let them set for about 20 minutes, then rinse clean....this helps take away the bitter taste they have.  Pat them dry real good then add olive oil, salt, pepper and garlic powder and then GRILL! Oh I'd say about 10 minutes on each side.

Next up...asparagus!  Since we are trying really hard to eat healthy and already had the grill going, we decided to steam these on the grill too.  I rinsed the whole bundle under cold water, then laid them on a long piece of aluminum foil, drizzled a bit of olive oil on, then salt and pepper and then rolled up the foil into a packet for the grill. Easy peasy!

Next we get to the good part.....the new recipe!  I found a recipe for Grilled Mexican Citrus Chicken on the Betty Crocker site.  Yummy!  I used boneless skinless chicken breast and I marinated them over night in a big ziplock baggie.  They were so delicious! So, there ya go, one brand new summer time recipe to try out!  I sure hope you like it and will try it too.

  1. Looks, YUMBO! Never grilled eggplant. Can't wait to try. I do my asparagus on the grill but lay the spears directly on the grates (diagonally or down they go, LOL) Coat them with OO and a little salt and pepper and a squeeze of lemon juice when they're done. Gonna do that tonight, in fact. Is it dinner time yet? xxD
